Minestrone Soup
Creating a warm and healing soup is as easy as 1-2-3 when it comes to the Mediterranean. Often referred to as a poor man’s soup, Minestrone is an affordable way to kick off eating a Mediterranean Diet. Focus on vegetables that are either in season or grab items from the freezer or canned food aisles.

Ingredients:
- 2 Tbsp extra virgini olive oil
- 1 carrot, grated
- 1 celery, sliced thin
- 1 small onion, chopped finely
- 2 cloves garlic
- 2 small summer squash or winter squash (based on season)
- 1 cup chard or spinach (based on season)
- 1 can fire roasted tomatoes
- 4 cups chicken stock (low-s0dium preferred)
- fresh herbs (parsley, oregano, thyme)
- 1/2 lemon, juiced
- 1/2 lb Pasta, cooked separate
- Parmesan cheese, for serving
